Tacos are another good way to keep your dinners tasty while staying on track with your nutrition. A good way to ensure that, is by adding healthier alternatives. Instead of refried beans and cheese, try adding a coleslaw or some type of vegetable.


Flank Steak

Corn tortillas

Broccoli slaw or Coleslaw


Green goddess dressing

Avocado or guacamole

Hot sauce or Salsa


Grill the steak for 8-10 minutes on each side, until medium-rare (or medium, if desired). Let the steak rest off the grill for 15-20 minutes.

Thinly slice, and chopped into pieces if desired. Place tortillas in the microwave, oven or on the grill to warm. Mix the arugula and coleslaw in a bowl adding the green goddess dressing. Place tortillas in microwave or on the grill to warm. After the tortillas are warm place the avocado and/or guacamole to the base of the tortilla, then add the desired amount of steak, then the coleslaw mixture and lastly your favorite hot sauce or salsa.
