This light and refreshing watermelon salad is a perfect side dish for those warm summer nights. Watermelon is packed with vitamin A and lycopene, a cancer protecting carotenoid that gives them their red hue.
1 bag (4 ounces) arugula stems removed and roughly torn
2 cups cubed watermelon
1 package (3 ounces) feta cheese, crumbled
2 tbsp. olive oil
Ground black pepper
In a large bowl, combine the arugula, watermelon and feta. Gently mix in the olive oil and pepper to taste.
